Matt is my mom's boyfriend and over the past few years he's been a pretty big culinary influence. This is one of the first recipes he ever passed on to me. Matt likes to bake by feel and this recipe is the written version of something he's been making for years. The following recipe was written by him for me when I was a sophomore in college. It's dead easy, reliable, and bound to make your dorm/apartment/house smell so so good. Pink spatulas optional, but strongly encouraged.
Oh! and don't try and cut down the sugar. It's not nearly as good.
Matt's Banana Bread
Try it. Love it. Make it every weekend.
- 3 bananas, stolen from the dining hall and smashed with your hands [in a bowl]
- 2 eggs
- 1 cup sugar
- 2 cups [whole wheat] flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon or so cinnamon (I’ve never measured it)
After you smash the bananas, just put everything else on top and then mix it with a pink spatula until there’s no more dry flour left in the bowl. Spray the bread pan with oily spray, put the batter in the pan [Matt swears by glass pyrex bread pans], and bake for an hour at 350 degrees.
